Assistant General Manager – Food & Beverage

The Quoin Hotel, part of the Method Co. collection, is seeking an experienced and dynamic Assistant General Manager – Food & Beverage to join our leadership team. Housed in a beautifully restored 19th-century building in the heart of downtown Wilmington, The Quoin blends timeless design, elevated dining, and warm, thoughtful service. The Assistant General Manager will oversee all food & beverage operations across our outlets, ensuring exceptional guest experiences and operational excellence that reflect the character and soul of The Quoin brand.
Key Responsibilities
- Oversee daily operations of all food & beverage outlets including the restaurant, bar, coffee shop, and rooftop, ensuring seamless service and guest satisfaction.
- Lead, mentor, and develop front-of-house and back-of-house teams to uphold service standards and drive engagement.
- Collaborate with the Executive Chef and Director of F&B to curate menus, enhance programming, and drive profitability.
- Ensure consistent adherence to health, safety, and quality standards across all outlets.
- Manage financial performance through labor controls, cost management, and revenue growth initiatives.
- Partner with the hotel’s leadership team on guest relations, events, and overall brand experience.
- Support in recruiting, training, and performance management to foster a culture of excellence and accountability.
- Participate in strategic planning and contribute to the continued evolution of The Quoin’s F&B identity.
Qualifications
- Minimum 3–5 years of progressive leadership experience in luxury or boutique hotel food & beverage operations.
- Strong leadership presence with a hands-on management style and passion for hospitality.
- Proven ability to drive guest satisfaction, financial results, and team performance.
- Deep understanding of restaurant operations, beverage programs, and guest service standards.
- Excellent communication, organization, and problem-solving skills.
- Flexibility to work evenings, weekends, and holidays as required by the operation.
